I would like to add the logo of my company stored in the OpenERP database in the layout of emails sent from the system. How can I set this?

You just need to add something like this in the email template HTML definition (in Settings > Technical > Email > Templates):
Of course you can modify the logo size by modifying the related parameters (i.e. width or length).
Simple, easy!
