If I order a paid app (either for the Community or Enterprise version), do I receive future updates of these app, either because of new features, bug fixes, as well because of a new Odoo version?

Yes.
If the module you bought is indicated as also available for another Odoo version, you will also be able to download those other versions, including previous ones.
But there is no guarantee that the app developer will provide updated versions in the future.
