I've noticed previous threads mentioning changing addons/product/report/product_label.xsl to customize the label layout.
However, that file does not exist and the file that seems to deal with the product label does not have any effect on the actual label.
I'm hoping to make the labels smaller width wise and possibly try and fit another column to save paper.

You can edit the label from the module's report directory.
In case you want to edit the size and manage labels as per paper-print, you may like to see https://www.odoo.com/apps/modules/10.0/label/.
