Is there a way to specify which lots should be reserve for sale order delivery ?

Have you seen \https://www.odoo.com/apps/modules/10.0/sale_order_lot_selection/ ?
This Module Allows you to select on sale order the production lot that will be delivered You can select a lot for every sale order line, and it will be proposed on the delivery.

go to inventory - configuration -> operation types -> delivery record
