I want to start an online education trial with odoo version 17. If I start it, it will automatically start with odoo version 18.

You Can not choose the Odoo version in the Odoo online platform,
However you can use odoo runbot to access a spesific version, or you can install Odoo locally whith whatever version you need

No, it's not possible to choose the version you would like to have on an education Database.
Indeed, the education database are always on the latest major version of Odoo. So when creating an edu- DB, it will be in Odoo 18.0 until September, when Odoo 19 wille be released.
