If I would like to store my customer's preferred shipping method (eg DHL) and their shipping account number, where do I key this into the Odoo? Thank you!

Delivery Method filed can be set for a contact in the sales and purchases tab.
Not sure how the account number integrates, you might likely have to add that using studio
