I plan to migrate an accounting software to openerp. Now I see that in the previous software, each product category will have its own account number

For example

- Drugs

  Income Account : 200001 Drugs Sales

Expense Account: 500001 Drugs Expense

- Medical Tools

  Income Account : 200002 Medical Tools Sales

 Expense Account : 500002 Medical Toos Expense


Do I need to setup single or multiple sales Journal for the above ? For example Drug Sales Journal, Medical Sales Journal ?

If it's single sales journal, whats the default debit account and default credit account for the journal  ? Is there a way to consolidate all sales to one account  ?

A journal may or may not have default accounts (see the Miscellaneous Journal for a journal without default accounts). It is up to you if you want to have one or more sales journals. I do recommend not to use more journals than necessary. And if you want to post all sales to one account, then you obviously set up only one sales account, but usually you have several sales accounts and using reporting you can "consolidate" sales as you like, but that's nothing Odoo specific, that's accounting and reporting 101.
