My company has only 1 product for now, but it is made up of a BOM of several parts. I want to keep track of quantities of the individual parts in the BOM as well as the assembled product and WIP (work in progress). I only see a way to add a product. Do I consider each individual part a "product" even though they are only part of the 1 product?

Yes. Everything is a product, whether it is a component, spare part, finished product, intermediate product, etc.
