Odoo has recommended Odoo.sh hosting but I have heard that some people setup Odoo on their own servers.

It is not trivial for everyone to do this successfully, mainly because there are a lot of conceptual skills needed, facility with specific commands, configuration files to manage and finally - multiple technology stacks to setup and be familiar with.
