Without enabling or configuring multi-company Odoo11 allows to create more companies (in the same database), I can not understand what function these companies would fulfill. I would appreciate if someone can clarify the concept

HI gerardo,
You can only create one company if you are do not enable the multi-company. If you need to create multiple independent companies, It's also possible in Odoo ERP. But you should enable Multi-company. and you can create multiple companies and do not add any parent company. then each company stand individual companies. and each user can give them access to a particular company.
You need a hierarchy it's also possible in Odoo ERP. Just parent company for the child companies. and users give them access to companies that they need.

for me its interesting because I have the accounting of differents countrys for differents companys, then you can use a different chart of accounts in every company.

Well the option gives you the facility to choose a company on records. Like while creating a product, you can choose a company (by default it takes a current user company, but you can change if you want). Without enabling multi companies you are not giving access to your users and all the records by default stored on current user's company.
Also this option helps you if you want to share common records across companies. (if you want to share products for all the companies)
