Changing field in Point of Sale [Odoo 17]

Question

Hello Odoo,
I am looking to add/change a field in the point of sale and need your guidance. Specifically in the Quotation/Order section

I want to remove the salesperson (or just add a new field next to it) and this field specifically which is the phone number when customers book an appointment.
