I have an order of 3000 pieces, I've produced 2500, now my client doesn't want the rest and so cancels the order. Now, I've figured out that there is no way to change the quantity of the order, however I can cancel the order. This then allows me to make an internal move to put the products that were reserved back into stock (in production -> stock)

This brings up a few points. 1. When a sales order generates the MO, how do you start production without having all products? e.g. if you have an order of 10.000, how do you start if you have enough components for 3.000? 2. Is there any way to cancel a partially filled order without it saying cancelled?

  1. You can edit your MO to update the quantity of the produced item. It will update the quantity of consumed materials.

Though, this does generate a new problem, any sales where this has been done will give me a message of shipping exception.

If you have confirmed the MO, then you cannot update the quantity as Maxime suggests. This is a real failing of OpenERP. As far as I can see, without writing a new module, you have to produce the batch, and then make all the stock adjustment reversals that are necessary.

In every other system that I have worked with, they have stages for MO components of Allocate; Issue; & Consume. The Allocations and Issue stages have release options so that the components can be used in other MOs.

This is a significant failing in OpenERP.
