You can update the unit of measure in the product form.
First you will need to create the unit measure and then assign it to the product in the product form

when you purchase your product, how do you order? by truck? do you order an x number of bags? Just set your unit of measure to the unit you use to procure your product.
That will give you an start in the problem, then you will need to figure out how to measure it at the moment of sales
