I want a price in GBP, USD and EUR per product, then I choose which currency I want to quote in. Possible?

Yes, this is easy to do. Go to Sales / Configuration / Settings, browse the page until Pricing / Sale Price and check « Specific prices per customer segment, currency, etc. »
