So how to query the inventory quantity of that product on the specified date?

Vistas
In Inventory/Reporting you'll find certain reports (Stock, Movement History, Valuation (also at date)). Maybe there's something you are looking for.
Please note that by (to me) unknown reason some reports are hidden and visible only in Developer Mode. (BTW: How to change this as I believe it's a very bad idea!)
