We have prepared a guide on how to integrate the Odoo Online or Odoo SH with Office 365 mail server ( https://ventor.tech/odoo/how-to-configure-emails ). It has been verified on some customers already, and all screenshots are made for Odoo 14 and 15 and latest version of Office 365.
Odoo 16 has no global differences for Odoo 15 for configuration Outgoing and Icoming Email server, so manual that mention before should help you.
